I never quite got my answer,

I will try phrasing it differently though, is it possible to make the
ecc keys with sha512 and aes256?

and is sha512 the most secure algorithm to go with aes256?

Yes.

Add these two lines to your gpg.conf file:

cert-digest SHA512
default-preference-list AES256 SHA512 SHA256 BZIP2 ZIP ZLIB

Then generate your new ECC certificate.
